Specially stabilised whipped cream stays light and fluffy longer! Decorate cakes, cupcakes, pies, etc. Followers may recognise this stabilised whipped cream. When published in 2018, its ease of preparation made it a reader favourite. After a few years, I added more success tips!
This ensures proper whipped cream thickening. Sprinkle unflavored gelatin powder over cold water in a microwave-safe bowl. Gelatin should sit for 3–4 minutes. It should dissolve and wrinkle like the photo above.
1
Heat the gelatin mixture in the microwave for a few seconds. Stir it well after removing it from the microwave. Give it a few more seconds in the microwave to dissolve the gelatin.
2
After all of the gelatin has completely dissolved, put it in a separate container and allow it to cool down a little bit while you combine the whipped cream.
3
Mix the heavy whipping cream, powdered sugar, and vanilla in the bowl of a stand mixer that has a whisk attachment. Just whip the ingredients together until they start to thicken and soft peaks start to form.
4
Slowly pour dissolved gelatin into whipped cream while mixer is running. Mix on medium until stiff peaks form. This won't take long, so don't overmix!

In addition to being used as a frosting for cakes and cupcakes, the stabilised whipped cream can also be used to decorate other types of desserts.
