This ultra moist and fluffy applesauce cake has unsweetened applesauce for apple flavour and four spices for warmth and depth. The brown butter cream cheese frosting tops it off perfectly!
– ¼ teaspoon ground allspice– ½ teaspoon salt– ½ cup unsalted butter softened (115 grams)– ½ cup packed light or dark brown sugar (100 grams)– ⅓ cup granulated sugar (70 grams)
– 2 large eggs at room temperature– ½ cup sour cream or plain Greek yogurt (120 grams)– 1 ½ teaspoons pure vanilla extract– ½ cup whole milk (120 ml)
Direction
Place finely chopped apples in a bowl with brown sugar and ground cinnamon. Coat apples in cinnamon sugar mixture. Set aside while making quick bread batter.

Mix flour, spices, baking powder, and baking soda in a large bowl. Cream butter and sugars in a stand mixer with a paddle attachment until light and fluffy. Be patient—this may take 3–4 minutes!
After adding each egg, mix until just combined. Mix in the sour cream and vanilla. Add dry ingredients to wet in two increments, alternating with milk. This avoids overmixing dry ingredients into batter.

Use a slotted spoon to add cinnamon sugar apples to the batter. Fold apples into batter gently until just combined. Try to keep as much liquid in the bowl as possible. Do not add extra juice to your batter!

Place the batter in a greased and parchment-lined 9x5 loaf pan. Use an angled spatula or spoon to spread it evenly. Add a few tablespoons of melted butter to the batter and sprinkle with cinnamon sugar.

Bake at 350ºF until a toothpick inserted in the centre comes out clean. My bread bakes for 65 minutes generally. Let the bread cool in the pan for 15 minutes before transferring to a wire rack.
