These homemade Cosmic Brownies have very fudgy brownies with chocolate ganache frosting and chocolate chips covered in candy. Better than the brownies you buy at the store.
INGREDIENTS
-1 cup unsalted butter melted and slightly cooled (2 sticks, 230 grams)– 1 ¾ cups granulated sugar (350 grams)– ½ cup packed light brown sugar (100 grams)– 3 large eggs at room temperature– 1 large egg yolk at room temperature– 1 teaspoon pure vanilla extract– 1 cup unsweetened cocoa powder (90 grams)– 1 cup all-purpose flour spooned & leveled (125 grams)– ½ teaspoon salt
INSTRUCTIONS
Warm the oven up to 180°C/350°F. Cover a 9x13-inch baking pan with foil or parchment paper, leaving a little extra on all sides to make it easy to take off. Spray foil well with cooking spray that doesn't stick, then set it aside.

Melt the butter and mix the white sugar, brown sugar, and granulated sugar in a large bowl using a whisk. Whisk in the eggs, egg yolk, and vanilla extract until everything is well mixed.

After sifting in the cocoa powder, flour, and salt, continue whisking until the ingredients are almost completely combined, pausing the whisking process regularly to scrape down the sides of the bowl.

Put the batter in the baking pan and spread it evenly. Bake for 27–33 minutes or until a toothpick inserted into the centre comes out clean with a few moist crumbs. Cool completely after removing from the oven.
